An exquisitely elegant sparkling rosé wine showing great finesse.
It has a delicate salmon-pink hue with tiny bubbles. Enticing aromas of wild strawberries and white peach mingle with a hint of rosehip. There are subtle autolytic notes of vanilla-scented brioche and scones with cream.
The mousse is soft and creamy with beautifully integrated bubbles. On the palate, fresh summer berries including cranberry and redcurrant meet stone fruits, nectarine and wild apricot. It has layers of complexity with citrus acidity and delicate minerality. The mouthfeel is excellent and it shows exceptional balance, lingering well after the last drop.
Excellent served well-chilled with seafood such as tuna carpaccio, hand-dived local Lyme Bay scallops or pan-fried garlic prawns. Also good with Thai-marinated fish including sea bass, red mullet or gurnard cooked en papillote with lemongrass and ginger

Nestled in the rain shadow of the Czech-Moravian Highlands, in the Znojmo sub-region of Moravia, sits Thaya. Winemaker Jakub Smrčka has been building the name for himself and for Thaya over these last few years. Having produced his first vintage in 2011, when he was only 20 years old, he came to Thaya passionate about the terroir of his homeland, his rule is simple yet bold: each vintage must be a little better than the previous one.
The wine presents a golden yellow hue and offers a wide array of aromas, including hints of baked bread crust and ripe yellow fruits, with a subtle note of honeycomb. On the palate, it is harmonious and mineral, showcasing a delicate touch of barrel ageing that adds depth to its flavour profile.

We brew using a bespoke blend of green teas from some of the best tea plantations in China, all ethically traded by our partners at rare tea company. They only work with farmers using organic principles who don’t use chemical pesticide or herbicides.
Our Kombucha is brewed and barrel-fermented in our nano brewery situated on Nania’s Vineyard in central Bristol, we have perfected a can-conditioning process and hand-can our kombucha in small batches. We make an authentic kombucha that is RAW and alive inside. It’s very much the real deal and we’re so confident in the provenance of our brew that we offer a S.C.O.B.Y guarantee. Our wonderful Sloe de Vie displays delicious fruit flavours of sloes hand-picked at the peak of ripeness following our harvest on the vineyard in 2015. Once fermented, the sloe wine was triple distilled and then bottled.
