Our ever-popular Pet Nat is back! A purely natural wine, fermented by natural yeasts with no added sulphites. It is a light, refreshing, slightly cloudy sparkling wine and is absolutely the perfect summer drink. We bottled during harvest while the wine was still frementing, keeping a light fizz in the bottle. It has a slight yeast sediment adding a great yeasty edge to the fruit aromas. The wine will gain yeasty aromas as it ages.
This is a natural wine in every way and is difficult to make, so we only use the best grapes available to us that we know will end up with the right flavours and balance in the wine.

The Verhaeghe family have been making wine in the Lot since the 1950s. Today it is Pascal and Jean-Marc in charge of the domaine, which is certified organic. They own three parcels of vineyards, the largest of which is 12.5 acres with stony calcareous clay which is called `Tran`, which plays an important role retaining heat and moisture. The Lady of Charmat is a multi-vintage sparkling brut rosé made from grapes grown at Off The Line vineyard. The fruit was whole-bunched pressed and aged in stainless steel tanks with a secondary fermentation taking place in a tank, a method known as ‘the Charmat method’.
This vivid pink, dry sparkling rosé is easy drinking and fruit driven. It has definition and expresses red fruit flavours with character and identity.

Our first vintage in 2010 feels like yesterday and like a different world altogether. The nerves and anxiety of years of work and planning all coming down to a single day. Thirty or so virtual strangers turned up to pick coralled by our friend Celia Kozlowski. Little did we know that some of them would still be harvesting with us to this day!
We sold the vast majority of the wine years ago but we kept a few bottles on lees for 13 years. We always keep a some in the cellars for family occasions and have decided to put 50 out into the world for people that are interested in seeeing how this gem has developed. The LD stands for Late Disgorged - doing it this way preserves the freshness of the wine and indeed, these bottles are remarkable. They resemble a blanc de blancs in terms of its taste profile which is fresh and full of minerality with distinctive grapefruit citrus aromas that I can't say that we remember from it's first incarnation. It's a beautiful delicate wine that is testament to the quality of those young vines at Higher Plot.
