Bacchus grapes are particularly well suited to our High Weald terroir, and produce a fresh, aromatic, crisp white wine. This 2023 vintage shows all the benefits of the long hot summer in the UK last year and is slightly more rounded and nuanced than our previous vintages, with strong aromas of pear and gooseberry on the nose and palate and with a deliciously smooth finish. A new experimental wine. The grapes were sourced from nearby Essex. They are destemmed and fermented using indigenous yeast and then pressed into an old burgundy barrels. The wine was aged for a total of 7 months with frequent lees stirring.This unusual and fun wine is expressive and textured, showcasing aromas of tropical and stone fruit, hints of dried citrus fruits and white pepper.

Every year, we release a small number of late-disgorged wines. These are particularly luxurious and fine thanks to a special winemaking technique.
If you’re already familiar with Dom Perignon’s Plénitude or Bollinger’s RD, then you know the magical combination of freshness allied with delicious flavours of brioche, cream, butter and toast that characterise late-disgorged wines.
But how does this kind of ageing alchemy happen? The answer lies in the lees.
