Tuffon Hall Sloe Gin is made using our own hand-picked sloe berries from blackthorn hedges on the farm. The sloes are steeped in gin which is distilled in the next door village. Our first vintage in 2010 feels like yesterday and like a different world altogether. The nerves and anxiety of years of work and planning all coming down to a single day. Thirty or so virtual strangers turned up to pick coralled by our friend Celia Kozlowski. Little did we know that some of them would still be harvesting with us to this day!
We sold the vast majority of the wine years ago but we kept a few bottles on lees for 13 years. We always keep a some in the cellars for family occasions and have decided to put 50 out into the world for people that are interested in seeeing how this gem has developed. The LD stands for Late Disgorged - doing it this way preserves the freshness of the wine and indeed, these bottles are remarkable. They resemble a blanc de blancs in terms of its taste profile which is fresh and full of minerality with distinctive grapefruit citrus aromas that I can't say that we remember from it's first incarnation. It's a beautiful delicate wine that is testament to the quality of those young vines at Higher Plot.

Wonderfully refreshing dry white with plenty of zest and backbone. It has a pale lemon hue with elegant legs. Delightful floral aromas of passionflower and lily marry honeydew melon and citrus lemon plus a touch of mandarin on the nose. The palate is dry with excellent acidity and a crisp mouthfeel which revives with every drop. Flavours of Sicilian lemon and yellow grapefruit mingle with braeburn and coxes apple and a hint of orange peel. It has a delicate saline character and great depth of flavour plus a lovely long finish.
Serve chilled with a seafood platter or shellfish. Also good with soused mackerel or roll-mops and especially with escabeche. Excellent with sushi but go easy on the wasabi. Try it with lemon sole and beurre blanc sauce garnished with samphire.

This is our classic blend of Chardonnay, Pinot Noir and Pinot Meunier grapes. It has a pale silver lime-leaf green appearance, with continuous small bubbles. This is our Little Waddon Vineyard sparkling ‘Col Fondo Rosso’ 2021
Our single estate Regent grapes grown here on the Jurassic Coast, sealed in tank with CO2 for a twenty-two day skin contact maceration to help break down the skins, followed by a wild fermentation.
Later blended with a portion of oak barrel fermented Triomphe D’Alsace to balance the acidity, and then bottled with approximately 10grams of sugar per litre which produces a second fermentation in bottle.
This produces a low intervention Sparkling Red wine that gives frizzante ‘little’ red bubbles!
Loganberry on the nose, a moreish taste of vanilla pods and blackberry fruit with red chocolate!
Col Fondo is a traditional Italian natural re-fermentation process in bottle: ‘Con il fondo’ translates literally to ‘with the bottom’ meaning sediment or lees is present; so if this bottle has been travelling we suggest you stand it up on it’s bottom in the fridge to rest a while before opening.
