A subtle oxidative style of sparkling wine produced in the traditional method and matured on the lees for 20 months. We have built more complexity into the base wine, maturing in French oak and on the lees prior to bottling, which offers up a more savoury style of English sparkling wine.
The colour has an amber hint in the glass and aromas of baked red apple, sultana, caramel and lemon rind. The palate is dry and has flavours of red apple and toasted baking spice, with a focussed acidity, soft lees tannin and delicate mousse.

Domaine Chignard farms 8 hectares of old vines in Fleurie, situated at the top of the hill sloping down to Moulin-àVent on pure granitic soils. Cédric is following in his father’s footsteps and continuing the traditional Beaujolais way of farming and winemaking.
Bright, focused, and energetic, the fruit-filled Fleurie "Les Moriers" reflects its outstanding terroir with good concentration and a superb depth not usually found in the wines of Fleurie. It's very lush and vivid, tasting generous and fluid with great vibrancy The vines average 80 years old and 'Les Moriers' has been known as one of the legendary vineyards of the Beaujolais for a few hundred years and this is it's best example.
