This is our 2021 Vintage ‘Willow‘ Still White wine
A small batch single vintage blend of our Phoenix and Seyval Blanc grown here at Little Waddon using pesticide free regenerative growing tehcniques.
Partially hand de-stemmed and foot crushed, left on skins before a wild fermentation.
Unfiltered and unfined with no sulphur added at any stage.
Tasting: Think of an English Summer day; a nose of elderflower, citrus fruit with a hint of peach, buttery toasted almonds and a well balanced acidity. Dry to off dry. Best served slightly chilled, and to let the wine fully open up don’t return it to the fridge.

This variety thrives on our red sandy soils, and makes up 27% or our 5 acre Shropshire vineyard.
After an excellent summer, we were able to really ripen a portion of our Pinot Noir Précoce grapes, resulting in this balanced red wine. The black cherry fruit character is complemented by some structured oak and subtle silky tannins. Classically English and terribly moreish!

A vivacious and refreshing, lower alcohol crisp dry white wine with lots of zesty appeal. Pale lemon hue with a flash of green and a few legs. Aromatic floral notes of lemon blossom and elderflower combine with green apple, lemon zest and gooseberry. It also has herbaceous notes of lemongrass and a faint hint of nettle on the nose. The palate is dry with racy acidity and vibrant freshness. It has attractive citrus flavours of juicy grapefruit and tangy lime which mingle with ripe gooseberry and kiwi-fruit. Subtle grassy flavours and herbal notes of kaffir lime leaf and coriander combine with salty minerality on the crisp dry finish. It is light-bodied and refreshing with lower alcohol than most Bacchus and demonstrates uplifting lime acidity plus good length.
Best served chilled with shellfish such as steamed cockles and mussels. An ideal match for flat fish including plaice, lemon sole, brill or turbot served with salty samphire. Delicious paired with lemony asparagus. Also good with stir-fried vegetables seasoned with garlic, lemongrass, ginger and coriander. Torri Cantine, producers of organic wine in Abruzzo for 60 years, has always made the respect for nature and for the land its priority. The radiant vine-covered hills of Torri Cantine express an infinite variety of scents and all the colours of the earth warmed by the sun. The Torri Cantine vineyards extend over 60 hectares in the municipalities of Colonnella, Controguerra and Torano, in the province of Teramo, from 100 to 300 meters above sea level. The favorable climatic conditions and the generous soil, together with the patient and scrupulous work in the vineyard and in the cellar, have made it possible to obtain wines of great value.
Colour is pale yellow with golden reflections, while the nose is floral with ripened yellow fruit, Fresh and rich in minerality and persistence. Lovely with fish and fresh or medium-aged cheese.

Litmus Red Pinot 2022 (6 Bottles) Dorking, Surrey, England

Modern white wines are generally pressed from their skins prior to fermentation. Orange wine is a term given to white wines that have been fermented and aged on their skins.
2022 Litmus Orange is produced from from 100% hand harvested Bacchus. The Bacchus was fermented and remained for six weeks on skins without sulphur dioxide.
Pale gold in colour the wine displays hazelnut, fennel and marzipan characters on the nose. The palate has a touch of Vanilla spice, is incredibly generous and complex and boasts a long broad palate with a gripping astringency and smooth, long finish. Enjoy with oily meats and spicy dishes.
Greyfriars Vineyard Yolande 2023 (6 Bottles) Puttenham, Surrey, England

This wine is a blend of Pinot Gris, Chardonnay, Pinot Blanc and Pinot Noir from the 2023 vintage and has been crafted to create a light delicate, fresh but aromatic white blend that celebrates the very best of the North Downs.
The Chardonnay, Pinot Blanc and Pinot Noir were whole bunch pressed with the Chardonnay formed purely from the cuvee fraction of the whole bunch press. The Pinot Gris was crushed and destemmed with a 2-hour soak. There was an addition of tea leaf tannins to the tank fermented wine to reduce the amount of added sulphites. 24% of the Chardonnay was fermented and aged in barrel for six months and 10% of the Chardonnay came from our Chardonnay ‘solera’ reserve tank which we started in 2015

Yolande Beekman flew to NE France as a radio operator in September 1943. Unfortunately in January 1944 her transmissions were detected and she was captured and tragically executed at Dachau in September 1944.
