When people ask me I never admit to having a favourite wine….it would be like having a favourite child – unthinkable!
However, I’m very close to admitting that this could be my favourite sparkling wine that we’ve released so far. I always love the gorgeous bronzed-gold colour of Blanc de Noirs wines coupled with their depth of flavour…..but what totally captivates me about this wine is the mouthfeel and balance.
It has the smoothest texture, the most delicious creaminess and a captivating balance of freshness and fruit. This is a fantastic example of the style that can be created with the right wine and patience! We’ve waited 5 long years for this wine to gently mature and I think it was worth it.

Fermented on skins for three weeks and aged in a mix of both new and aged American and Hungarian oak barrels for twelve months. Aromas of vanilla, cinnamon and hints of white pepper spice.
