A limited edition still wine made from 100% Pinot Noir. This is a youthful and fruity red, with ample black cherry and plum, rounded out with some gentle spice. A portion of this wine was aged in French oak for six months to add depth to the lighter Burgundy style.

The Rondo is whole bunch pressed and fermented in Stainless Steel tanks to preserve the rich berry fruits. The Pinot Noir and Chardonnay are whole bunch pressed and aged in French oak 225L barrels to add smooth structure and body. There are aromas of Citrus, Mulberry, blackcurrants and strawberries coupled with delicious summer fruit freshness on the palate. When people ask me I never admit to having a favourite wine….it would be like having a favourite child – unthinkable!
However, I’m very close to admitting that this could be my favourite sparkling wine that we’ve released so far. I always love the gorgeous bronzed-gold colour of Blanc de Noirs wines coupled with their depth of flavour…..but what totally captivates me about this wine is the mouthfeel and balance.
It has the smoothest texture, the most delicious creaminess and a captivating balance of freshness and fruit. This is a fantastic example of the style that can be created with the right wine and patience! We’ve waited 5 long years for this wine to gently mature and I think it was worth it.
