Ashdown Boundary Block is made from 100% Merlot grapes. Aged in old oak barrels for 19 months. Light to medium bodied with a ruby to garnet hue. On the nose aromas of plum, blackcurrant, blackberry, almond, rhubarb, Cherry Bakewell and vanilla leading to flavors of cooked cherries, black currant jam, vanilla, cranberries and blackberries.
It is smooth with a good length. Its tannin structure is well balanced and delicate, while still delivering an intense and complex taste. The East of England has an increasingly suitable climate for sparkling wine production and English Quality Sparkling Wine is rapidly gaining international recognition, praise and awards. At the Wine GB East 2022 Awards, Dedham Vale Vineyard 2018 Sparkling Brut was awarded a Silver Medal in recognition of its outstanding quality.
This Brut Sparkling wine is made using the methode champenoise. It has spent time on its lees generating a refreshing lively mousse (the French term for the bubbles that rise to the top of a sparkling wine), good depth on the palate with attractive fresh fruit flavours and yeasty overtones.
Pristine with persistent bubbles and cream texture. Toast and citrus fruit with balsamic notes. Very long fresh gooseberry finish.

On the palate, Paragon is a symphony of precision and complexity. The wine delivers crisp green apple, lemon zest, and a chalky minerality, rounded by a subtle creaminess from oak influence. The finish is long and refreshing, with a delicate interplay of fruit, acidity, and structure that invites another sip.
