Each year 400kg of fruit were whole bunch pressed and allowed to ferment spontaneously. In 2021 the fermenting juice was added to the existing base wine and bottled when the correct sugar level was reached. No additions were made at any point during the process. Disgorged with zero dosage.

Inspired by the ancient winemaking traditions from the Georgian region, we seized the chance to create an extraordinary wine style, now fashionably known as "orange wine." The original name for which is "Amber Wine." Amber Wine from Amber Valley! We could say its the Amber nectar but some brewery or another might get upset.
A luminous golden-amber hue greets the eye, radiating the rustic elegance of this handcrafted gem from the Amber Valley.On the nose, a symphony of aromas unfolds: ripe apricot and zesty tangerine are complemented by a whisper of vanilla and a delicate hint of cedar, offering an inviting bouquet that teases the senses. The palate delivers an adventurous medley of flavors. Bright citrus zest mingles with succulent apricot and lush tropical pineapple, harmonized by a textured, tannic grip that adds depth and structure. A subtle Fino-like oxidative note enhances its complexity, making this a wine of remarkable character and intrigue.
With its 11% alcohol content and a style rooted in tradition yet full of modern allure, Amber Wine is perfect for the discerning wine lover seeking something distinctive. Our Vintage is crafted only in exceptional years, such as 2018, when we believe the concentration, ripeness and maturity of fruit will deliver an exceptional wine for extended ageing. Blended from 70% Chardonnay and 30% Pinot Noir, the Chardonnay delivers excellent structure and vibrancy, while the Pinot Noir brings body and depth to deliver great roundness on the palate.
Our Vintage spends a minimum of 36 months on lees before release creating deliciously biscuity, creamy, honey aromas with deliciously poised acidity and a hint of salinity.

Small parcels of our home vineyard Chardonnay were carefully selected across three exceptional vintages and gently pressed in whole bunches. Predominantly barrel fermented in a combination of old and new, toasted
Burgundy and Loire oak barrels, a small selection of base wines also underwent malolactic conversion. Following secondary bottle fermentation in our naturally cool, underground cellars, our second-release Oak Reserve then spent 60 months on lees before disgorging, with six months on cork to complete its journey.
