The grapes are whole bunch pressed into a mix of stainless steel tanks and old Burgundy barrels for fermentation. The combination of tanks and barrels offers a depth and complexity that enhances aromas of elderflower, citrus, grapefruit, pineapple and white pepper.
We are excited to bring back the second edition of our GMF, an early release, champagne method sparkling wine. The 2020 vintage was the forever summer of Britain, adding to a long warm growing season with exceptional quality. Bottled under crown cap, we leave this opulent wine undisgorged, giving the benefit continued lees ageing in the bottle, adding to the texture and complexity. The wine spends a minimum of 6 months ageing on lees prior to bottling and secondary fermentation.

Their “Clayhill Vineyard Chardonnay” is celebrated for its precision, with notes of citrus, green apple, and flinty minerality, while their “Painter of Light Pinot Noir” offers delicate red fruit flavors, soft tannins, and a hint of spice. Leslie’s Reserve Brut NV is a bright and fresh sparkling wine that captures the elegance and purity of English winemaking. Named after co-founder Leslie Balfour Lynn and first released in 2021 alongside the Rosé, this classic traditional method wine highlights Balfour’s signature style, emphasising fruit and aromatics with minimal reserve wine. Fermentation in stainless steel tanks and full malolactic fermentation before ageing on lees for a minimum of 12 months.

This dry white sparkling wine is made from 70% Pinot Noir and 30% Chardonnay grapes hand-picked from our vineyard in October 2019.
It was made using the classic bottle fermentation method and has spent three years on the lees. It is pale gold in colour and displays a fine mousse.
It has a floral bouquet with grapefruit and lemon on the nose. Dry on the palate with delicate aromas of apple, white peach, lemon and lime and a nutty finish.

The latest release of our highly successful Classic Cuvée Brut that was originally released in 2019, and sold out quickly.
This new release is made from grapes from the excellent 2019 and 2020 vintages. Made from a blend of 50% Chardonnay and 50% Pinot Noir, secondary fermentation in bottle followed by 24 months gaining complexity on lees. The wine therefore benefits from some lovely bottle age and is ready to be enjoyed now. 12% ABV.

Boco by House Coren; a high-quality Charmat method sparkling wine made in West Sussex using top-quality grapes from England. An iridescent kaleidoscope of pale, white peach. Clear with ultra-fine bubbles. A taste of peaches, ripe pears, a hint of raspberry and a long, clean, citrus, and green apple finish.
A blend of 40% Chardonnay, 60% Pinot Noir, fabulous with most dishes but especially good with shellfish, charcuterie, canapes and pizza. Also complex enough to hold its own as an aperitif.
