Founded by Tim Chafor in 2009, the 23-acre vineyard sits on historic terroir once part of the ancient Royal hunting forest of Bernwood. Our rosé is made from pinot noir grapes sourced from Clayhill Vineyard in nearby Essex. The grapes are hand-picked into small crates then travel the short distance to our winery in Battersea. After a short cold soak, the grapes are pressed and fermented in old French oak.
The wine spends a further 8 months on lees in tank and barrel and 1 year in bottle prior to release. The result is an expressive and textured rosé with elements of strawberries and cream and ripe red cherry.

A blend of 60.5% Pinot Noir, 37% Chardonnay and 2.5% Pinot Meunier, made in the Saignée method, this intensely coloured wine is bled off following contact with the skins. Saignée sparkling rosés often have deep colours and powerful, complex flavour profiles.
The nose immediately draws you in, with wild strawberries and macerated red berry flavours that recall the very ripest red berries of the summer. There are also hints of cherry shortbread and winter spice.

Winemaker's Notes: A dry, crisp and delicate rosé. The Pinot noir used to make this rosé was crushed and cold macerated for 14 hours to extract both colour and body. It then underwent fermentation 35% in American oak the remainder in stainless steel tank.
