This Court Garden Ditchling White is a delicious blend of Chardonnay, Pinot Gris, Pinot Blanc and Ortega. The varieties were fermented and aged in stainless steel to retain the clean aromas and soft fruit notes and then blended to create this delicious single-vineyard estate white wine. This is a light medium bodied dry wine. There are aromas of apple, grapefruit, lime and stone fruits, as well as tropical fruits on the palette and a clean fresh finish. The Ortega grapes are hand-harvested and transported to the winery where they are destemmed, crushed, and pressed. The ferment was tasted daily and stopped at desired residual sugar level by chilling and filtering. The yeast was specially selected and was a sweet wine yeast Zymaflore ST. This yeast is susceptible to cold shock, making it easy to stop the ferment.
An aromatic medium sweet wine, well balanced with uplifting aromas of peach, gooseberry and elderflower.
