Displaying a delicate, pale lemon hue, this complex sparkling wine has honeyed beeswax and subtle baked apple aromas. The palate is a harmonious blend of richer and fresh fruit, with creamy apple and pear flavours and a delicate hint of vanilla on the finish from the well integrated oak ageing.
While this would serve as a wonderful aperitif, it would go down equally well with creamy, crème fraîche chicken pasta with pancetta; or with a Normandy style Moules with Cider, or lighter roast dishes such as pork tenderloin with fennel.

About Greyfriars Vineyard
Our vineyards are predominantly planted with the three classic Champagne varieties; Chardonnay, Pinot Noir and Pinot Meunier. However, we also have small plots of Pinot Gris, Sauvignon Blanc and Pinot Blanc. Our state-of-the-art tasting room was built over lockdown and opened in 2021. Passion throughout the winemaking and vineyard teams has led to a number of our wines gaining critical acclaim, winning a number of prizes in international competitions including the Decanter World Wine Awards.
The current Greyfriars Vineyard was originally set up in 1989 and was one of the first in England to plant the traditional Champagne grape varieties (Chardonnay, Pinot Noir, Pinot Meunier). 30 years later, in 2011, Mike and Hilary Wagstaff took over with the aim of expanding the vineyard to its current size of 40 acres and to produce stunning English Sparkling Wine, building a state-of-the-art winery complete with an underground chalk cave cellar to accommodate this growth.
Our aim is not just to produce a Champagne ‘copy’ but rather to create a small range of great sparkling wines which reflects the unique geology, soil conditions, climate and heritage of the wonderful landscape of the Surrey North Downs. In addition, we are looking to take advantage of the most modern grape growing and winemaking technology, planning some exciting trials and experiments in both the vineyard and the winery over the next few years. This wine is also Zero Dosage and crafted from selected hand-picked Chardonnay & Pinot Blanc grapes gently pressed to extract the highest quality cuvee juice. A portion of the juice underwent primary fermentation in large French new oak barrels with subsequent prolonged lees contact in barrel prior to blending.
After secondary fermentation this wine enjoyed 44 months or more on-lees maturation in bottle, all of which has helped to create a beautifully balanced and elegant Sussex sparkling wine with layers of complexity, great poise and length.

This is a first release of our 100% organic Chardonnay sparkling wine, made in a similar style to our Limney Estate, without yeast added (primary fermentation), unfiltered and with minimal added sulphur. It was fermented in stainless steel. The wine has a dry balance and aromas of white fruit (peach, baked apple) with a clean finish.

An elegant white sparkling wine with crystalline features. Beautiful pale lemon with lots of tiny bubbles.
It has attractive floral aromas of acacia, elderflower and citrus blossom along with Sicilian lemons and chalky minerality.
The palate is crisp, dry and exceedingly refreshing with flavours of freshly squeezed lemons, grapefruit, lemongrass and salty minerality on the finish. It shows very pure varietal expression with exquisitely refined structure and definite poise.
Perfect for celebrations, serve well-chilled as an aperitif alongside shellfish canapés such as oysters, mussels or cockles. Great with flat fish such as lemon sole véronique, turbot, brill or dabs.
