Pinot Noir is the elegant “heartbreak grape,” cherished for its delicate grace and expressive charm. Its name comes from the French words for “pine cone” (pinot) and “black” (noir), nodding to its tightly packed, dark clusters. This ancient vine, traced back to Roman-era Burgundy, is considered one of the oldest cultivated varieties, and is the cornerstone of Burgundy’s renowned reds.
Typically light to medium-bodied with high acidity, Pinot Noir offers red fruit aromas like cherry, raspberry, cranberry, alongside earthy undertones of mushroom and forest floor. Subtle notes of vanilla, clove, or spice appear when aged in oak.
Affordable examples come from cool climates like Oregon, New Zealand, and southern England, delivering finesse and food-friendliness.

This dry white sparkling wine is made from 70% Pinot Noir and 30% Chardonnay grapes hand-picked from our vineyard in October 2019.
It was made using the classic bottle fermentation method and has spent three years on the lees. It is pale gold in colour and displays a fine mousse.
It has a floral bouquet with grapefruit and lemon on the nose. Dry on the palate with delicate aromas of apple, white peach, lemon and lime and a nutty finish.

This blend replaces our highly successful Ditchling Reserve. Using Chardonnay, Pinot Noir, Pinot Meunier and Pinot Noir Précoce, the wine has been longer in reserve and a large proportion has been barrel aged before bottling. Long aging on the lees has ensured a rich, but still fruity balance. Also awarded a gold medal at the 2021 International Wines & Spirits Competition; the judges commented “Stunning nose of honeycomb, bruised apple and brioche – like a fine dessert with apple four ways. The grapes were pressed under nitrogen to retain their delicate flavours, with a proportion fermented in neutral oak to add complexity. Secondary fermentation was completed in tank using the Charmat Method, making this wine one of the first of its kind produced in England. This vibrant sparkling white is full of fresh lemon and pear. A single vineyard blend of Seyval Blanc and Pinot Noir. On site at Melbury Vale Vineyard we have one block of established Seyval Blanc vines and one block of established Pinot Noir vines. While Pinot Noir is traditionally used in sparkling wine, Seyval Blanc has become a go-to English preference for sparkling production. Pinot Noir and Seyval Blanc at Melbury Vale ripen about the same time and are checked for sugar levels that are ideal for sparkling. This wine is a pale coral pink color with fine bubbles typical of a high quality English sparkling wine. On the nose there are aromas of fresh summer berries and meadow flowers, and on the palate there are bright notes of ripe strawberry, watermelon, and lime zest.
Food Pairings: Dorset shellfish dishes, smokey pulled pork, and with cake after tea.
