Typically light to medium-bodied with high acidity, Pinot Noir offers red fruit aromas like cherry, raspberry, cranberry, alongside earthy undertones of mushroom and forest floor. Subtle notes of vanilla, clove, or spice appear when aged in oak.
Affordable examples come from cool climates like Oregon, New Zealand, and southern England, delivering finesse and food-friendliness.

As its name suggests this wine is made of selected base wines from multiple vintages to produce an approachable and immediately enjoyable style. Others call this style ‘non-vintage’ – we just prefer the name ‘multi-vintage’! The blend of this wine will vary slightly each year in order to maintain a consistent style, but it will typically be a combination of Chardonnay, Pinot Blanc, Pinot Noir or Pinot Meunier and will undergo 3 years on-lees ageing.

This dry white sparkling wine is made from 70% Pinot Noir and 30% Chardonnay grapes hand-picked from our vineyard in October 2019.
It was made using the classic bottle fermentation method and has spent three years on the lees. It is pale gold in colour and displays a fine mousse.
It has a floral bouquet with grapefruit and lemon on the nose. Dry on the palate with delicate aromas of apple, white peach, lemon and lime and a nutty finish.

This blend replaces our highly successful Ditchling Reserve. Using Chardonnay, Pinot Noir, Pinot Meunier and Pinot Noir Précoce, the wine has been longer in reserve and a large proportion has been barrel aged before bottling. Long aging on the lees has ensured a rich, but still fruity balance. Also awarded a gold medal at the 2021 International Wines & Spirits Competition; the judges commented “Stunning nose of honeycomb, bruised apple and brioche – like a fine dessert with apple four ways. It has lovely poise, classy and complex all held in perfect poise by the bright quintessentially English acidity”.

The 2018 is made from 63% Chardonnay, 19% Pinot Noir and 18% Pinot Meunier. With 5 years maturing in the bottle on lees, it has plenty of yeast character combined with the suprisingly youthful fruit. This is a wine that is delicious now and will develop further over the long term.

bright, fresh and fruit-driven, made with a blend of sustainably grown, aromatic varieties that require minimal intervention in the vineyard. The grapes were pressed under nitrogen to retain their delicate flavours, with a proportion fermented in neutral oak to add complexity. Secondary fermentation was completed in tank using the Charmat Method, making this wine one of the first of its kind produced in England. This vibrant sparkling white is full of fresh lemon and pear. A crisp palate of melon and green apple lead to a bright finish, making it the perfect aperitif.

A vibrant English sparkling wine with bright citrus notes and crisp freshness. It has a medium lemon colour and fine delicate bubbles. Attractive aromas of acacia blossom and lemon peel mingle with orchard fruits, including green apple and ripe pear plus mild brioche and subtle notes of pastry. On the palate it is deliciously crisp and dry with zest acidity and a lively mousse. Citrus flavours of lemon and yuzu marry greengage and mirabelle plum alongside exotic hints of kumquat and cashew nut. It shows a wonderful purity and saline minerality with a tangy finish.
Serve this dry, sparkling wine well-chilled in a flute as an aperitif. Pair it with canapés including smoked salmon blinis or fish goujons. Enjoy it with Japanese sushi amnd sashimi. Our multi-vintage blend uses fruit from all varieties and areas of our single vineyard to produce a wine that displays the unique qualities of the whole site. Using reserve wines, aged in oak, that have been carefully built up and nurtured from our very first harvest, we can add layers of complexity and texture to each wine. Every numbered release has it’s own identity and make up, which we love to celebrate. No 8 is based on the wonderful Pinot year that is 2019. It was a cooler and longer ripening season than 2018 and gives this wine a more elegant and focussed structure. The pronounced Pinot character is already giving lovely toasty complexity which will continue to build over the next few years. Enjoy on release but will also reward further ageing.
