Fermented in a mixture of stainless steel and oak at cool temperatures using selected Burgundy yeast strains to enhance complexity, stone fruit, floral characters and minerality. Post-fermentation there was full malolactic fermentation and extended fine lees ageing with some bâtonnage to accentuate the natural weight.
A late dry spell in 2021 allowed us to hang the fruit for as long as possible to ensure we attained peak physiological ripeness for our house style. The Chardonnay 2021 is a blend of aromatic and non-aromatic chardonnay fruit sourced from a collection of growers in Essex where the microclimate and soil allow the grapes to achieve excellent ripeness, harvested between 31st October and 7th November 2021.

An opulent, fruit driven nose full of ripe pear, stone fruit and lemon peel, alongside sweet spice, vanilla and a delicate smoky note. On the palate, there’s lots of tropical fruits, fresh citrus, white peach and a salty mineral note. A vibrant English sparkling wine with bright citrus notes and crisp freshness. It has a medium lemon colour and fine delicate bubbles. Attractive aromas of acacia blossom and lemon peel mingle with orchard fruits, including green apple and ripe pear plus mild brioche and subtle notes of pastry. On the palate it is deliciously crisp and dry with zest acidity and a lively mousse. Citrus flavours of lemon and yuzu marry greengage and mirabelle plum alongside exotic hints of kumquat and cashew nut. It shows a wonderful purity and saline minerality with a tangy finish.
Serve this dry, sparkling wine well-chilled in a flute as an aperitif. Pair it with canapés including smoked salmon blinis or fish goujons. Enjoy it with Japanese sushi amnd sashimi. Also good with Scandinavian-inspired dishes such as pickled herring or soused mackerel or mild fusion flavours such as yuzu and sea bass ceviche, or thai-style mussels.
