"Chilli" the cat stumbled across us on his travels during June 2021 and decided to adopt us and make Chiltern Valley his new home! We welcomed him with open arms and this very special black cat is loved, adored and spoilt rotten by all his humans!! During the summer months "Chilli" may join you in the court yard to enjoy some summer sun, a few cuddles and of course to see what delights you are enjoying from the on-site food truck! Every year to pay homage to this special lad we name a wine after him (which of course he chooses!!) and this year is his delicious "Chilli Cat Cuvee", cheers "Chilli".

Melbury Vale Vermouth Mist (6 Bottles) Shaftesbury, Dorset, England

£117.00
by Wines by Cellars

UK MAINLAND SHIPPING INCLUDED

This aromatised wine is our Dorset answer to “vermouth”! The white wine base is from our Dorset grown grapes. We bump up the ABV of these wines by fortifying with a small amount of our wine spirit distilled at Melbury Vale. We then blend with all natural extracts and lime syrup. Because of the slight fortification of this wine, it has a longer shelf life once opened. We recommend a bottle of our aromatised wine can stay open in the fridge for up to 2 weeks – but we don’t expect it to last that long! This amazingly zingy and refreshing wine is best served really chilled. You can serve it in a pitcher with ice and garnish with fresh mint, or pour into a glass over ice with Gin to create a Gin Mist! It’s so refreshing it is perfect with salty snacks as an aperitif!

Smith and Evans LD 2010 (6 Bottles) Langport, Somerset, England

£270.00
by Wines by Cellars

UK MAINLAND SHIPPING INCLUDED

Our first vintage in 2010 feels like yesterday and like a different world altogether. The nerves and anxiety of years of work and planning all coming down to a single day. Thirty or so virtual strangers turned up to pick coralled by our friend Celia Kozlowski. Little did we know that some of them would still be harvesting with us to this day!

We sold the vast majority of the wine years ago but we kept a few bottles on lees for 13 years. We always keep a some in the cellars for family occasions and have decided to put 50 out into the world for people that are interested in seeeing how this gem has developed. The LD stands for Late Disgorged - doing it this way preserves the freshness of the wine and indeed, these bottles are remarkable. They resemble a blanc de blancs in terms of its taste profile which is fresh and full of minerality with distinctive grapefruit citrus aromas that I can't say that we remember from it's first incarnation. It's a beautiful delicate wine that is testament to the quality of those young vines at Higher Plot.
