The Nightjar reserve pinot noir is made using grapes sourced from Clayhill Vineyard in Essex. The wine is matured for a total of 36 months prior to release, 24 in barrel and 12 in bottle, gaining texture and complexity allowing the potential of this wine to shine through. The pinot noir has an essence of refinement that shows the longer term ageing potential of our wines.

A fabulous sparkling Blanc de Noirs with great depth of flavour.
The colour is lemon gold with a fine stream of tiny bubbles. Floral aromas of white iris & peony marry stone fruit and cherry on the nose with the mildest touch of vanilla and hazelnut.
The palate is fruit-driven with yellow peach, ripe quince and notes of medlar apple. It has exceptional balance and a persistent mousse with lingering citrus flavours alongside a lovely nutty, pistachio and almond finish.
Excellent served chilled with seafood crustaceans such as Dublin Bay prawns, langoustines or lobster.
Also good with tuna or swordfish. Try it with monkfish wrapped in parma ham. Pairs well with cold meats and mild charcuterie or terrines such as chicken and rabbit terrine. Perfect with beef carpaccio..

An opulent, fruit driven nose full of ripe pear, stone fruit and lemon peel, alongside sweet spice, vanilla and a delicate smoky note. On the palate, there’s lots of tropical fruits, fresh citrus, white peach and a salty mineral note. The Fernández family were grocers in Madrid when they decided to set this biodynamic estate up from scratch. Their objective was always to make accessible, easy to drink biodynamic wines and what they’ve achieved in 10 years is nothing short of impressive. High on a gently rolling plateau they built a purpose made winery cleverly laid out to facilitate collecting the grapes and making and storing the wine as efficiently as possible. The 100 hectares of vineyards are planted with many varieties but their Syrah, Tempranillo, Chardonnay and Viognier really stick out.
This Sauvignon Blanc is robust and bold. It has aromas of tropical fruit, bruised apple, brazil nut and dried orange rind. This amber wine is at the cross roads of a red wine for its tannins and a white wine for its good acidity.
