This family-owned boutique winery was founded in 1995 and dedicates itself to the production of super-premium, sites pecific red wine made in small volumes. Glaetzer Bishop is a true expression of Barossa Shiraz that is elegantly structured with a long finish. Hints of cut plum, dried spice and dark chocolate on the nose. Named after a mythical beast the Gwyllgi, gwyll “twilight” + ci “dog”, who is said to appear as a frightful apparition of a Black Wolf with baleful breath and blazing red eyes.

This grape produces dark blue grapes when ripened at the end of October giving the wine a slight blush appearance. By allowing the natural fermentation to extend to 30 months, the Pinot grape makes a very fine sparkling wine having a fruity aroma and spicy flavour. Crisp and dry.

The Rondo is whole bunch pressed and fermented in Stainless Steel tanks to preserve the rich berry fruits. The Pinot Noir and Chardonnay are whole bunch pressed and aged in French oak 225L barrels to add smooth structure and body. There are aromas of Citrus, Mulberry, blackcurrants and strawberries coupled with delicious summer fruit freshness on the palate. Enjoy on its own or with grilled shellfish, salade niçoise, paella, rustic pâtés and terrines, charcuterie and sheep’s cheese. Medium bodied dry wine. 11% abv.
