Yotes Court ‘Benie des Dieux’ Blanc de Blancs 2020 (6 Bottles) Maidstone, Kent, England

£217.00
by Wines by Cellars

UK MAINLAND SHIPPING INCLUDED

Elegant, Traditional Method sparkling wine. Flaky Danish pastry on the nose with ripe orchard fruits and glazed apricot tart on the palate.

This elegant Traditional Method sparkling wine has seen nearly 3 years of lees ageing and careful use of batonage, developing aromas of flaky Danish pastry. The palate is full bodied with notes of ripe orchard fruits, glazed apricot tart and hints of summer herbs on the finish.

Food Pairing:
A chilled glass of Blanc de Blancs is traditionally enjoyed as an aperitif. However, its fresh acidity pairs well with light foods such as oysters, white fish and summer salads at a garden party.

Sandridge Barton Blanc de Noirs 2020 (6 Bottles) Stoke Gabriel, Devon, England

£276.00
by Wines by Cellars

UK MAINLAND SHIPPING INCLUDED

This is the first sparkling wine in our Sandridge Barton range, and it has certainly hit the ground running, winning a 'Master' medal at the Global Sparkling Wine Awards 2023 and is one of only 7 wines to achieve this top award out of 230 entries.

Made with 100% Pinot Noir from the best parcels, it's fermented naturally with indigenous yeasts in second fill French oak barrels where it spends a further 10 months on gross lees. We bottled this wine for second fermentation in June 2021, where it spent a further 18 months on the lees in bottle. We disgorged this wine with no dosage added, so it comes in at 0 g/l of residual sugar.

Raspberry gold in colour, with delicate aromas of rhubarb, fresh orchard fruits and cooked apple. The palate is dry, with delicate tart red berry flavours and subtle autolytic characters of baked bread and puff pastry. This leads you into a long finish lifted by the ripe and fruit-driven acidity.

Henners Blanc de Blancs 2018 (6 Bottles) Herstmonceux, East Sussex, England

£294.00
by Wines by Cellars

UK MAINLAND SHIPPING INCLUDED

An intense and luxurious wine, both balanced and complex, with salivating salinity woven throughout. Citrus with a hint of honey, the buttery silkiness makes this a grand wine for the big occasions.

A real treat for those extra-special occasions. This Internationally recognised wine is perfect for when you are looking to spoil the company you are keeping. While of course it can be drunk on it's own, we'd recommend pairing with a posh meal to make it a night you won't forget.

Gusbourne Late Disgorged Brut Reserve 2013 (6 Bottles) Appledore, Kent, England

£630.00
by Wines by Cellars

This Library Release wine has been gently maturing in our cellars. A Pinot Noir-dominated blend from a cool vintage, this wine is elegant and nuanced with layers of complex flavours. The overall impression is bright and vibrant. Notes of red currant, red fruits and orange zest sitting alongside cloves, cherry bark and a delicious succulent apricot note. The finish is complex and long.

Every year, we release a small number of late-disgorged wines. These are particularly luxurious and fine thanks to a special winemaking technique.

If you’re already familiar with Dom Perignon’s Plénitude or Bollinger’s RD, then you know the magical combination of freshness allied with delicious flavours of brioche, cream, butter and toast that characterise late-disgorged wines.

But how does this kind of ageing alchemy happen? The answer lies in the lees.
