Set in the heart of Buckinghamshire’s picturesque countryside, Chiltern Valley Winery & Vineyard is a boutique estate crafting exceptional English wines. Founded by Tim Chafor in 2009, the 23-acre vineyard sits on historic terroir once part of the ancient Royal hunting forest of Bernwood. With a world-class winemaking team, Tim grows classic Champagne varieties Chardonnay, Pinot Noir, and Pinot Meunier, alongside England’s signature grape Bacchus and Madeleine Angevine. The latest release of our highly successful Classic Cuvée Brut that was originally released in 2019, and sold out quickly.
This new release is made from grapes from the excellent 2019 and 2020 vintages. Made from a blend of 50% Chardonnay and 50% Pinot Noir, secondary fermentation in bottle followed by 24 months gaining complexity on lees. The wine therefore benefits from some lovely bottle age and is ready to be enjoyed now. 12% ABV.

This grape produces dark blue grapes when ripened at the end of October giving the wine a slight blush appearance. By allowing the natural fermentation to extend to 30 months, the Pinot grape makes a very fine sparkling wine having a fruity aroma and spicy flavour. Crisp and dry.

The 2019 vintage began with abundant sunshine, a record-hot Easter, and a warm, wet summer. Despite challenges, careful vineyard management yielded clean, flavourful grapes. The blend includes 11% barrel-fermented wine and 12% aged reserve wines, with four years on lees for added complexity. Perfect for celebrations, it pairs beautifully with canapés and laughter.
