A vibrant English sparkling wine with bright citrus notes and crisp freshness. It has a medium lemon colour and fine delicate bubbles. Attractive aromas of acacia blossom and lemon peel mingle with orchard fruits, including green apple and ripe pear plus mild brioche and subtle notes of pastry. On the palate it is deliciously crisp and dry with zest acidity and a lively mousse. Citrus flavours of lemon and yuzu marry greengage and mirabelle plum alongside exotic hints of kumquat and cashew nut. It shows a wonderful purity and saline minerality with a tangy finish.

Serve this dry, sparkling wine well-chilled in a flute as an aperitif. Pair it with canapés including smoked salmon blinis or fish goujons. Enjoy it with Japanese sushi amnd sashimi. Also good with Scandinavian-inspired dishes such as pickled herring or soused mackerel or mild fusion flavours such as yuzu and sea bass ceviche, or thai-style mussels.
